Fresh Strawberry Muffins


Good Morning!

My 3 yr. old daughter and I made these muffins this morning. I have been making these for about 5 years and they are absolutely delicious, most especially with the strawberries from the garden.

Here's the recipe if anyone is interested:


Fresh Strawberry Muffins
yields 12 muffins

Ingredients

1/2 cup butter, softened
3/4 cup sugar
1 egg
2 cups all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
1/2 cup milk
1/2 tsp. vanilla
1 1/2 cups chopped fresh strawberries
cinnamon sugar
Instructions:

Cream butter and sugar. Add egg, beat well. Sift flour, baking soda and salt. Add flour mixture and milk alternately to butter mixture. Add vanilla. Gently stir in strawberries. Spoon batter into lined muffin pan. Sprinkle cinnamon sugar over batter. Bake at 400 for 20-25 minutes.

well, since my children just picked all the strawberries out back that they weren't supposed to pick...guess i'll make muffins. life gives you lemons...make lemonade i suppose.

These sound delicious. I just ate all of our homegrown strawberries but have some store bought ones (strawberries are one of the few foods Nathan will eat!!) and maybe we'll give the muffins a try with those. I know the flavor will be diminished......(love the picture, too.) Beth
